Chocolate chip banana bread

Banana bread is one of my favorite cake, and as soon as I turned vegan I tried a few recipes but I was never convinced, too thick, too sticky, too heavy... But I've perfected a very easy recipe throughout the years. Crispy on the outside, and fluffy and extra moist in the inside!

Chocolate chip banana bread

1 loaf

Preparation 10 min - Cooking time 45 min


Bowl 2

3 medium bananas

½ lemon juice

100g melted coconut oil

175g dark chocolate

Bowl 1

300g wheat flour

60g brown sugar

½ tsp baking soda

½ tsp baking powder

⅕ tsp salt


Preheat oven to 190°C (375°F)

Chop dark chocolate into different sizes.

Combine all "Bowl 1" ingredients together in a big bowl and mix well.

In a medium bowl, mash 2 ½ bananas until smooth.

Add the lemon juice and coconut oil to the mashed bananas and whisk to blend.

Add the wet preparation to the big bowl, and mix until combined.

Mash coarsely ½ banana leaving chunky pieces, and add to the preparation as well as the chopped chocolate and mix well.

Grease loaf pan using coconut oil and pour the mixture into it.

Bake for 40-45 minutes, or until golden browned.
If in doubt, insert a toothpick or knife into the middle, it should come clean.
