Creamy Vegan Eggnog in 5 minutes
This vegan version of eggnog is full of warming flavors, rich, spicy and creamy. I hardly ever drink alcohol, but you can add your favorite rum or bourbon to it. It's totally up to you, it'll be delicious either way.
Healthier and cruelty-free version of your usual annual eggnog.

Preparation 5 minutes
½ tsp ground cinnamon
½ tsp ground nutmeg
½ tsp vanilla powder (you can use extract)
Cinnamon sticks for the decoration
500 ml coconut milk
70g raw cashews
3 tbsp maple syrup
60 ml water
3-5 tbsp rum or bourbon
Soak the cashews in water for at least one hour (to overnight)
Blend all the ingredients until smooth
Strain into glass, sprinkle grounded nutmeg on top and add a cinnamon stick. Serve
