Velvety carrot, sweet potatoes, coconut and curry soup
The most comforting soup of all times. Creamiest and softest texture with sweet many flavors. A taste bud's pure delight.

VELVETY SWEET COMFORTING SOUP
5 servings - I always double this recipe
Preparation time 30 min - Cooking time 20 minutes
500g Carrots (1 pound + 1.65 ounces)
250g Sweet potatoes
1/2 Red onion
1/2 Yellow onion
1 tsp curry powder
1 tsp turmeric
1/2 tsp ginger powder
Chili powder (to sprinkle on top)
300ml vegetable broth
300ml coconut milk
1 tsp coconut oil
1/2 tsp salt
Start by peeling, rinsing and chopping coarsely the sweet potatoes and carrots. Cut onions into strips.
In a skillet add 1 tsp of coconut oil. When heated, add the onions and cook until golden brown.
In a cooker add the onions, vegetable broth, and the chopped sweet potatoes & carrots.
Add salt, spices (curry, turmeric, & ginger). Mix until combined.
Add the coconut milk and mix well.
Cook on medium heat for 20-25 minutes. The sweet potatoes and carrots must be very soft.
Mix everything in a blender.
Sprinkle on top some chili powder when served.
